Although I was born in Mexico City, I have spent most of my life near the beach, and this recipe is from

Veracruz. You can make it with the seafood you like the most.

Seafood Soup

Preparation time: 15 minutes

Cooking time: 40 minutes

Serves: 4

Ingredients

·½ onion, finely chopped

·2 cloves garlic chopped

·2 tablespoons olive oil

·2 tomatoes, de-seeded and chopped

·6 cups water

·1 carrot, diced

·1 medium potato, diced

·1 cup green beans, trimmed

·1 fillet of snapper or a fish head

·1 cup octopus precooked

·1 cup shrimp

·1 cup squid precooked

·Salt and pepper to taste

To accompany

·¼ onion, finely chopped

·¼ cup cilantro, chopped

·2 serrano chiles, chopped into squares

·Lime halves to taste
